Having said that, this was before we saw how Ireland began to embrace the wave of the food truck. Here us out, we know that food trucks and buses are not new. They have been around for many years and can be found all over the world. But when it came to Ireland, they were only really found at significant events such as Bloom and big match days outside Croke Park.

Nowadays, however, you can find them almost everywhere, selling anything from coffee & cakes to even freshly cooked stone-baked pizza. And if you ask us, we are delighted to see the Food & Beverage Industry giving these old secondhand buses and trucks another chance at life.

I don’t think we have much to thank Covid-19 for, but I think the repurposing of old, secondhand buses is something we should be thankful for. Think about it. Nowadays, you can grab a coffee almost everywhere. I even had a pizza in the middle of nowhere the other day…. Should I even say anything more?
